These meringues have a crisp outer shell with a fluffy, marshmallowy interior. It’s like eating a dense little cloud of holiday magic.

Ingredients
100 g egg whites (1 part)
200 g granulated sugar (2 parts)
1 tsp oil-free extract of your choice
Gel food coloring (optional)
Sprinkles (optional)

Large piping bag
French star tip, Ateco 867
Small food-safe paint brush
Parchment
Directions
Preheat your oven to 175ºF.
Add 1-2” of water to a medium pot to simmer.
Combine the egg whites and sugar in the bowl of your stand mixer and place over the pot of simmering water.
Whisk constantly until the sugar has dissolved. To test, rub the mixture between your fingers. You should not feel any granules. Honestly, it should feel like… snot.
Put the bowl back on the stand and whisk on high until you have soft peaks.
Add your extract and food coloring.
Whisk on high again until you have glossy, stiff peaks. Do not over-whisk.
Paint streaks of food coloring inside your piping bag.
Add the meringue to your piping bag. Pipe the tree shape onto parchment.
Add your sprinkles.
Bake at 175ºF for 90 minutes. After 90 minutes, turn off your oven, but let the meringues cool while in the oven.
